No gluten free bread on hand? Not a problem! By slicing apples or firm pears you have a healthy substitute. Of course, fruit sandwiches may not go with your favorite gluten free cold cuts, but an almond butter, peanut butter, or whatever your favorite butter may be, is the perfect compliment to fresh fruit, and provides your protein. However, sliced chicken or turkey on apples may work well. In addition, nut butter also provides adhesion so that your add-ons stick together, without falling out. Whatever you choose, you cannot go wrong with fresh fruit. It’s delicious and nutritious!

Note: On my KitchenAid 13-Cup Food Processor I slice the apples on the third lowest setting. The lowest is 1/8-inch thick.

Peel or Not to Peel?

The peel of an apple is high in many different types of antioxidants which reduce the risk of cancer. In addition, the peel of apples and blueberries, as well as some vegetables contain ursolic acid, which helps inhibit the growth of cancer cells. Ursolic acid may also decrease obesity.

Because non-organic fruit contains pesticides, do purchase organic whenever possible. If you do not, I suggest peeling your fruit.

These lovely bites of health may be served closed, open-faced, as appetizers or a healthy gluten free dessert.

Fruit Sandwiches

Yield: 1 apple per person/1/2 for appetizer

Sliced apples or pears with nut butter, nuts, oats/grains and raisins/dried fruit. So delicious!

Ingredients:

  • Sliced firm apples or pears, with seeds removed
  • Oats (raw, toasted or cooked) (or your favorite grain: quinoa, millet, etc.)
  • Nuts, chopped, (raw or toasted)
  • Eried fruit (raisins, apricots cut into small pieces, etc)

Instructions:

  1. Spread nut butter onto one slice of fruit; top with your oats/grains, nuts and dried fruit; top with another slice of fruit. You can even use 2 different slices of fruit. Alternatively, you may serve them open-faced as an appetizer.

  • Great idea, we were on vacation and making sandwiches and didn't have any more gluten free bread and I made sandwiches with the cheese slices as bread. So we had lettuce, tomato, turkey and cheese sandwiches without bread. You can also wrap them all up and have finger food. Less all the carb and calories too.
