I'm diabetic with periphial neuropathy and am trying to find a bread that is made either with almond flour, coconut flour and with a sweetner not sugar but either monk fruit or honey, so that i an have snacks etc and keep the sugar level down.
Also, an easy to make bread or whatever so that it can be made for just a couple of days
What size challah bread pan does this recipe need?

The measurements of my metal pan (at the top) is 14 x 5 1/2“ and it is 2 1/4 inches tall. I would stick with metal because it gets super hot and helps rise dough.
