Gluten Free Cranberry Coffee Cake Recipe from Namaste Mix

I was sent a couple of items from Namaste Foods to sample. The one I recently tried was their Biscuits, Pie Crust and More! Flour Blend which also makes dumplings, shortcake and coffee cake. The package had several recipes including an orange cranberry coffee cake recipe. Unfortunately, I am allergic to citrus and had to substitute the orange juice for applesauce and added more cinnamon (yum!) – very moist! I have included my recipe along with the recommended ingredients and instructions (see “versus…”). I recommend this mix, as it is close to Bisquick and I bet will make some very good recipes besides this one. I can’t wait to try the pie crust! The coffee cake rose beautifully, even with all of that heavy applesauce! This recipe is gluten-free, casein free, (egg-free if you use an egg substitute), and (nut free, if you skip the walnuts on top).

Gluten Free Cranberry Coffee Cake Recipe from Namaste Mix

Yield: Serves up to 9

A scrumptious cranberry gluten free coffee cake using Namaste's Biscuits, Pie Crust and More mix.

Ingredients:

    For the Coffee Cake
  • 3 cups Namaste's Biscuits, Pie Crust and More! Flour Blend
  • 1-1/2 cups unsweetened apple sauce (versus 3/4 cup orange juice + 2 Tablespoons grated orange rind called for in the recipe) - Add less applesauce if you want it to have more of a crumb and not so sweet; and lessen cooking time.
  • 1/3 cup oil (I used grape seed oil)
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 cup dried cranberries or other dried fruit
  • For the Topping
  • 2 teaspoons cinnamon (versus 1 teaspoon)
  • 1 Tablespoon brown sugar
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Mix together all topping ingredients and set aside.
  2. Preheat oven to 350°F.
  3. Combine all coffee cake ingredients (except cranberries).
  4. Fold in cranberries.
  5. Pour into a 8x8" baking pan.
  6. Bake for 30 minutes if using orange juice. Bake 50-55 minutes if you are using 1-1/2 cups applesauce.

Tips

On my apple sauce version, I had made it with 1/2 cup sugar, but if you're going to use 1-1/2 cups apple sauce, I suggest decreasing the sugar. The cranberries that I used were very sweet, though.
