Gluten Free French Fried Onions Recipe

Ingredients:

• 1 medium yellow onion cut in half and extremely thinly sliced
• 1 cup brown rice flour, chilled
• 1/2 teaspoon salt
• 1/4 teaspoon onion powder
• 1/2 teaspoon paprika (optional)
• 2 large cold egg yolks
• 3/4 cup gluten-free beer (Bards, Redbridge, etc.) (or 2/3 cup sparkling water), chilled
• 2 qt oil, for deep-frying

Instructions:

1. Whisk the brown rice flour, salt, onion powder, and paprika.
2. Add egg yolk and beer and whisk until thoroughly blended.
3. In a deep-fryer or heavy skillet heat 3 inches of neutral-flavored cooking oil to 375°F.
4. Dip the onion strips or rings into the batter and shake off any excess.
5. Place a few onion rings at a time into the hot oil and cook until golden brown, approximately 1 minute.
6. Remove the onions from the oil using metal tongs and transfer them to a paper towel-lined plate to drain.
7. Use to top green bean casseroles and other casseroles or Chinese food to add additional texture and crunch.
