Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy!

Gluten Free Fried Bananas

Yield: Serves 1-2 per banana used

Frying bananas turns a simple fruit turns into a luscious melt in your mouth dessert with a wonderful crisp texture.

Ingredients:

  • 1 banana, sliced*
  • 1 Tablespoon butter, oil, or palm shortening
  • 1 teaspoons brown sugar (or replace all sugars with agave for vegans)
  • 1 teaspoon sugar (or evaporated cane juice/sugar)
  • Ground cinnamon (optional)

Instructions:

  1. Melt butter in a large skillet. Add sugars; allow the sugars to melt for only a minute or two while stirring occasionally; raise temperature to medium high; add bananas and cook until bananas are warm to the touch on the tops, about 6 minutes. Sprinkle in some cinnamon and stir, if desired.
  2. Individually plate your fried bananas. Cut them or leave whole. Then top them with a rich Gluten Free Caramel Sauce (dolce de leche), Gluten Free Chocolate Caramel Sauce, Chocolate Ganache, and/or Gluten Free Whipped Cream. Another alternative is to add extra butter and sugar to the pan and use some of the warm sauce to pour on top of the fried bananas. In some countries plantains are served with sour cream.

Tips

Alternatively, you may use all sugar versus using any brown sugar, but the brown sugar makes a nice crisp crust and ensures nice browning. Using coconut oil may be a nice touch for those who enjoy the flavor.

*If your bananas are over-ripe, keep the slices large. To do this, cut them diagonally. Otherwise, slicing them small is fine.
