Recently, I purchased a bottle of Fischer & Wiser Roasted Raspberry Chipotle Sauce that I could not wait to use. Unfortunately, it was made in a facility that manufactures wheat products. I just had to create a recipe for everyone to use that is completely gluten free! Luckily, I had some frozen raspberries in the freezer! I used this gluten free raspberry chipotle sauce as a marinade for steak last night, only marinading for 30 minutes. Then I left the rest of the steak marinade for 24 hours and they were both great, but the 24 hour marinade had penetrated the meat a little bit more, creating a bit more flavor. My husband and I have a new fave marinade now. I even added a little sauce to our brown rice. Double yum! Enjoy.

Gluten Free Raspberry Chipotle Sauce

Yield: Little over 1 cup

A gluten free raspberry sauce with a bit of kick with the addition of chipotle sauce. Great as a marinade or for adding flavor to sides

Ingredients:

  • 1.5 lbs. thin beef steak
  • 2 cups frozen or fresh raspberries
  • 1/8 to 1/4 cup diced gluten free green chiles* (canned) (depending upon how hot you like it)
  • 1/4 cup agave syrup
  • 1 Tablespoon gluten-free chipotle sauce recipe
  • 1/4 teaspoon liquid smoke, hickory flavor (Wright's)

Instructions:

    To Make the Sauce
  1. Add raspberries to medium size sauce pan. Mash them and saute for about 15 minutes.
  2. Strain the raspberries using a fine mesh sieve into small sauce pan. Once you have only what seems like a ball of pudding left, continue to sieve more through, about half. What first comes through is juice; then the next is more of a jell from the actual raspberry meat.
  3. To that sauce pan, add chiles, agave, chipotle sauce, liquid smoke and barbecue sauce (if using); saute for about 10 minutes.
  4. You can either use it as is, or run it through a food processor to mash the chiles. I left mine as is, as the bottled sauce I purchased had chunks of chipotles in it. Another thought is to saute the chiles with the raspberries and sieve them both together.
  5. Grill, fry or broil as you like.
  6. To Make the Rice
  7. I took about 3 cups of cooked brown rice; mixed in about 1/2 cup sauteed onion; and added 2 Tablespoons of the raspberry chipotle sauce. It was great! We both loved it!

Tips

* I use La Victoria brand green chiles. Steak is best cooked at room temperature. It cooks more evenly. Leave it out to marinade if you are going to only marinade it for 30 - 60 minutes. If you do not have any raspberries on hand, but have a gluten-free raspberry jelly or preserve you can use it instead of the agave and raspberries.

    1. We do not produce any wheat products, but do have some ingredients (like soy sauce) that contain
    wheat.
    2. We have a very stringent allergen program which has been validated by third party testing.

      Thank you for your response, but I was just going by the label which states,

      "Manufactured in a facility that processes: peanuts, tree nuts, milk, fish, soy, what and eggs."

      Therefore, there is a chance of cross-contamination of gluten for those are highly sensitive.
