I have never had a tuna melt before, but decided I could make a gluten-free tuna melt without cheese! Of course, you can add cheese, if you desire. I wanted to add fish to my diet. I really do not like fish very much. I suppose there is a little child still left in me! Tuna melts are a great way to disguise the taste of fish, which may be a great way of getting kids to eat tuna that do not.

Gluten Free Tuna Melt

Yield: Makes 2 sandwiches
A flavorful, yummy tuna melt, made on gluten free bread.
Ingredients:
1 small can (4.5 oz.) albacore tuna (I use Chicken of the Sea Very Low-Sodium Chunk White Albacore Tuna)
4 slices Udi's Whole Grain Bread or White Sandwich Bread (I used Whole Grain)
1 Tablespoon butter (Use unsalted for low-sodium diets)
Instructions:
Open and drain the tuna.
With a fork, break up the tuna chunks and add your desired amount of mayonnaise. I use about 3 heaping measuring tablespoons.
Add vinegar, celery, pepper and onion, if using; mix well.
Place half the tuna on one slice of bread; add cheese and other vegetables, if using; close; and slice diagonally.
Melt butter in a skillet or non-stick frying pan; fry on both sides until golden brown. When turning the sandwich, hold the top while flipping over. If using cheese, cover the pan and heat until cheese melts.
