After visiting Mexico this summer, I was determined to find out how to make soft gluten free white corn tortillas. I usually buy Mission Super Soft White Corn Tortillas. They are much softer than their yellow corn tortillas, closer to flour tortillas, but with more fiber and obviously no gluten. However, if you prefer freshly made gluten free corn tortillas and arepas, without gum and preservatives, try this simple recipe. The special corn flour is easily accessible online and in specialty markets. You only need to add water and salt. You don’t need a tortilla press to make them; however it works with one.

Mission White Corn Tortillas Ingredients:
Masa flour, water, cellulose gum, propionic acid (to preserve freshness), benzoic acid (to preserve freshness), phosphoric acid (preservative), guar gum, amylase.
Note: While the instructions state to use only 2 cups of Harina Blanca, I use more to create a kneadable dough.
You can't get much simpler than making a one-flour recipe mixed with salt and water. Make tortillas as needed. You can even freeze the dough and defrost when you're ready.

Looks to me like the label on P.A.N Harina Blanca says it may contain wheat. Is there a substitute ingredient that is certain to be gluten free?

You may be looking at an old version of P.A.N. My package contains no wheat warning and is labeled gluten free on the front of the package. It reads, "May contain soy." You can see the labels for nutrition, ingredients, and more if you click on the red link. It takes you to Amazon.com. I hope this helps.
