I’ve been on a huge Chinese food kick lately. I don’t quite know what my body’s craving, but we’ve enjoyed it very much. This gluten free wonton soup is part of that craving kick. My husband doesn’t usually like to make a meal out of soup, but he went to town on this one. Enjoy!

Gluten Free Won Ton Soup Recipe

Yield: Serves 6
An easy gluten free wonton soup recipe. Just be sure to make the wontons in advance and then you can just throw the soup together.
Ingredients:
For the Dough:
2 cups tapioca flour
1 cup corn starch (or potato starch), plus more for dusting
In a large bowl, combine pork, sugar, wine, soy sauce, 1 teaspoon chopped green onion and ginger. Stir together and set aside to rest for 30 minutes.
To Make the Dough:
In a large bowl, whisk together all dry ingredients.
Whisk 1 1/4 cups water with 2 tablespoons oil to form a stretchy type of dough, the consistency of raw biscuit dough. I use a pastry cutter to cut the dough and liquids together. Add additional water to create the correct consistency.
Dust with a little cornstarch to get it dry enough to handle without sticking to your hands. If the dough is too dry you can always add a little water.
Sprinkle a smooth surface generously with a mixture of cornstarch and rice flour. Flour your hands and rolling pin, as well. Turn the dough adding additional flour to the flour-dusted surface, as needed. Roll out the dough thin as possible without tearing or sticking to the surface.
Cut dough into 3-inch squares.
Working with one square at a time, add about 1 measuring teaspoon of filling. Lay the square facing you in a diamond shape. Pull the top corner down to meet the bottom corner and pinch edges to seal. Bring left and right corners together above the filling and pinch to seal. Alternatively, see How to Fold Wontons article.)
To Make the Soup:
Bring the chicken broth to a boil. Add the wontons and cook for 5 minutes. Garnish with green onion, and serve.
