Green Goddess Salad Dressing Recipe (Naturally Gluten Free)

I have been craving this green goddess salad dressing recipe for about a month, and finally got around to creating it. When I looked at the ingredients for Kraft brand Gluten Free Goddess dressing I saw that it contained xanthan gum. Luckily for us gluten free dieters, we usually have this ingredient on hand; however, you don’t have to include if you prefer a gum-free salad dressing. You can just use less water as needed and add vinegar to taste at the end. The best part about this recipe is that t does not contain any blue and yellow food coloring. Instead, it calls for naturally green ingredients such as parsley and avocado. I hope you enjoy this recipe!

Green Goddess Salad Dressing Recipe (Naturally Gluten Free)

Yield: Makes 1 1/2 cups

A naturally gluten free green goddess salad dressing recipe replacing the artificial food coloring that many brands contain for naturally green ingredients.

Ingredients:

  • 3/8 cup extra virgin olive oil
  • 1/2 teaspoon xanthan gum
  • 5 Tablespoons water (or milk)
  • 3 - 4 Tablespoons white distilled vinegar* (depending upon tang preference)
  • 1/4 cup non-fat Greek yogurt (or gluten-free sour cream)
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon gluten free mustard
  • 14 sprigs flat leaf parsley, stems removed (or equivalent amount of basil or chives)
  • 1/2 small avocado**

Instructions:

  1. In a small cup whisk together oil and xanthan gum and add to food processor or blender.
  2. Add remaining ingredients and puree until creamy and parsley is completely pureed, up to 5 minutes, depending upon power or food processor or blender.

Tips

*Using 4 tablespoons of vinegar creates a tangy dressing. If you're not a vinegar lover, use less, to taste.

**You can color this recipe any way you desire. You can omit the avocado and use chives or basil to replace it.
