Learn how to make chocolate curls like a professional baker. There's just one secret ingredient found in most kitchens.

Ingredients:

  • 3 ounces semi-sweet baking chocolate (Baker's)
  • 1 Tablespoon shortening (vegetable or organic palm)

Instructions:

  1. Prepare a baking sheet by turning it upside down and set aside.
  2. Place the chocolate and shortening into a microwave-safe bowl. Microwave until they both melt, a little less than 1 minute. Remove from the microwave and stir using a butter knife.
  3. Pour the chocolate mixture on the back of the baking sheet, and spread it in an extremely thin layer using an offset/frosting spatula.
  4. Place it in the freezer for a few moments, just long enough for it to set. When pressed, the chocolate should leave an slight mark, but you should not be able to dent it.
  5. Using a thin, narrow spatula or clean putty knife designated for kitchen use, scrape the chocolate from the bottom of the pan. If the chocolate is just set, it will curl. If it is frozen or too soft, it will not curl. The width of the knife/spatula will determine the width of the curls.
  6. Freeze the curls in a resealable ziplock bag immediately. Don't wait until you have all of the chocolate curls made. Use them to garnish your favorite gluten free dessert recipes.
