I made this gluten free chili without tomatoes because I have a tomato allergy. I also made this chili without beans and is gluten-free. I miss the sweetness that tomatoes bring to a good chili recipe, but I found a way to sweeten it up this recipe without tomatoes. It can be made as mild or hot as you wish. Just skip the cheese topping and it will be dairy free, too. My husband and I really enjoyed this gluten free chili recipe and hope that you will, too!

Tips:
You can use other thickeners such as corn starch, tapioca flour, potato flour or tapioca starch. You just need to mix it with a bit of water and add a little bit at a time until it reaches the desired thickness.
*Spoonable Stevita brand stevia sugar equivalents are approximately 1/8 teaspoon stevia to 1 teaspoon sugar.

I made this recipe today. I am allergic to tomato and beans and I really like it. I added corn for sweetness instead of stevia. Yum. I also added extra cumin and chili powder. I took some out for me and then added tomato and beans for my husband and kids.

i tried this recipe because i'm on a strict no-sugar, no-wheat, no-dairy, no-bean diet (exciting! i know - but i've lost 14lbs in 5-1/2 wks!) and because i'm supposedly slightly allergic to tomatoes (plus they are on the higher end for carbs). originally i was going to substitute the flour as thickener with almond flour, but opted to just not use it. i did add 2 zucchinis chopped, used grass-fed beef, and i was out of thyme.
i think there may be an error in the ingredients, as it lists 3 cups beef broth AND 2-1/4 cups chicken broth. after adding the 3 cups of beef, i realized that it was too much, and without using the thickener, i had to reduce it in the pot for an hour or so.
overall i think it's a great recipe and i would do it again, but if felt slightly too sweet for me so personally i would reduce the stevia to maybe 1/4 teaspoon or less, and i'd use 2-1/4 of broth if going without the thickener. thanks for this recipe!

I am so sorry! I don't know how those 3 cups of beef broth got in there! I only use 2 1/4 cups of chicken broth! I must have altered another recipe and forgot to remove it. Again, please accept my apologies. I am glad you liked it! I would love to add veggies to mine, but have a hubby who would probably disapprove! :-) Great idea, though!
