Carla’s Gluten Free Shepherd’s Pie (Tomato-Free Allergen-Free)

Since I’m allergic to tomatoes, this gluten free shepherd’s pie recipe is tomato-free. In addition, it calls for a dairy-free mashed potato recipe and is also allergen-free.  While shepherds pie (aka Cottage Pie in Britain) is a delicious meal any day, because it is Irish, it makes a perfect St. Patrick’s Day meal.

Carla’s Gluten Free Shepherd’s Pie

Yield: Serves 3

A saucy, flavorful gluten free allergen free shepherd's pie recipe that will knock your socks off.

Ingredients:

    For the Potato Topping:
  • 1 recipe Easy Dairy-Free Mashed Potatoes (thin enough to easily stir and spread)
  • For the Filling:
  • 1 Tablespoon olive oil
  • 1/4 teaspoon hot chili oil (optional)
  • 1/2 medium yellow onion, chopped
  • 1/3 cup finely chopped carrots (food processor works well)
  • 2 medium stalks celery, finely diced
  • 1 large garlic clove, minced or finely grated
  • 1 pound lean lean ground beef, turkey, or bison
  • 1/8 teaspoon ground cloves
  • 3/4 cup [gluten free] beef broth
  • 2 Tablespoons dark brown sugar, firmly packed (or equivalent sugar substitute)
  • 1 Tablespoon superfine brown rice flour
  • Gluten free smoked paprika
  • Gluten free spray olive oil
  • Salt and freshly ground pepper, to taste

Instructions:

  1. Make the mashed potatoes as instructed in the above recipe link.
  2. To Make the Filling:
  3. Add oils to a large skillet and preheat over medium heat.
  4. Add onion, carrots and celery; reduce heat medium-low; and saute until tender, about 15 minutes, occasionally stirring.
  5. Add ground beef and increase heat to medium high. Cook until beef is no longer pink.
  6. Sprinkle with cloves and brown sugar; stir and cook until sugar melts.
  7. Season with salt and pepper, to taste; and stir.
  8. Add broth, lower heat and simmer for about 7 minutes or until all vegetables are tender.
  9. Sprinkle the mixture with rice flour and stir. Bring to a boil and stir until thickened.
  10. Scoop mixture into a 9 x 9-inch baking dish, spread mashed potatoes on top and sprinkle with smoked paprika.
  11. Spray top with gluten free spray olive oil, place under a broil 8 inches away from heating element, and set to high heat for about 3 minutes or until golden brown on top.
