Chilled Gluten Free Chicken Lettuce Wraps

An addictive, restaurant quality, Asian salad you'll want to make for guests and family meals. It's easy to keep the chicken mixture on hand and grab some lettuce to quickly make a snack or meal.
Ingredients:
2 chicken breast (1 lb.), cut into cubes, boiled or fried in oil, chilled (or room temperature)*
To a large bowl, add cold chopped chicken, water chestnuts, cilantro, and sprouts; and toss to combine.
Pour desired amount of sweet chili sauce over the top and toss again.
Arrange 6 lettuce cups on each of the two dinner plates and fill the center with the chicken mixture.
If garnishing with a carrot slice: Cut the carrot in half, length-wise. Using a vegetable peeler, peel two long strips from the center/widest portion. (I often keep the strips in a jar of water, folded almost like an accordion to create curls. Then store the jar in the refrigerator.) Use one on each plate for garnish.
Tips
*You can also use leftover chicken and cube or roughly chop it.
