Sweet & Spicy Chilled Chicken Gluten Free Lettuce Wraps

If your new year’s resolution was to start a low-calorie or low-fat diet, this addictive, gluten free chicken lettuce wrap recipe is perfect to add to your recipe repertoire. Just realize that this is not low in carbs as the sweet chili sauce is high in carbs (contains sugar). You can serve the filling warm or chilled. Using leftover chicken and bottled sauce makes this recipe so fast and easy! Enjoy.

Chilled Gluten Free Chicken Lettuce Wraps

An addictive, restaurant quality, Asian salad you'll want to make for guests and family meals. It's easy to keep the chicken mixture on hand and grab some lettuce to quickly make a snack or meal.

Ingredients:

  • 2 chicken breast (1 lb.), cut into cubes, boiled or fried in oil, chilled (or room temperature)*
  • 1 (or 2, for extra crunch) 8-oz. can gluten free water chestnuts, drained, rinsed and minced
  • 2 Tablespoons fresh, chopped cilantro (or flat leaf parsley)
  • Handful of sprouts (I suggest radish sprouts) (optional)
  • Gluten free sweet chili sauce (see homemade recipe here)
  • 1 carrot, peeled, for garnish (optional)
  • 12 leaves/cups of butter lettuce

Instructions:

  1. To a large bowl, add cold chopped chicken, water chestnuts, cilantro, and sprouts; and toss to combine.
  2. Pour desired amount of sweet chili sauce over the top and toss again.
  3. Arrange 6 lettuce cups on each of the two dinner plates and fill the center with the chicken mixture.
  4. If garnishing with a carrot slice: Cut the carrot in half, length-wise. Using a vegetable peeler, peel two long strips from the center/widest portion. (I often keep the strips in a jar of water, folded almost like an accordion to create curls. Then store the jar in the refrigerator.) Use one on each plate for garnish.

Tips

*You can also use leftover chicken and cube or roughly chop it.
