When you’re serving Chinese food, it’s nice to have at least one easy appetizer as others are usually labor intensive such as my Gluten Free Egg Rolls and Potstickers recipes. These fried gluten free wonton wrappers are super easy, yet delicious and versatile! There are no gluten free wonton wrappers to make! I share with you an easy substitute. Serve this appetizer with sweet and spicy sauce or one that is either sweet or spicy. You can even use them on top of main dishes or Chinese chicken salad for crunch.

Fried Gluten Free Wonton Wrappers

Yield: Makes 8 snack servings

Crispy fried gluten free wonton wrappers that you don't have to make. Just dip and fry and season as desired.

Ingredients:

  • 1 cup sparkling water
  • 1 - 2 large egg yolks
  • 1-1/2 teaspoons granulated sugar
  • 1 teaspoon salt (or less for low-sodium)
  • 1 cup + 2 tablespoons brown (or white) rice flour
  • 1 (8 oz.) bag Rice Stick Rice Flake Sheet (Three Ladies Brand*)
  • 1 - 2 quarts neutral-flavored oil (I used light olive oil)

Instructions:

  1. 1 recipe Sweet Chili Sauce*** or Thai Kitchen brand) (I like half and half)
  2. Preheat the oil in a deep pot (a Dutch oven works well) or deep-fryer to 360ºF.
  3. Whisk together the water, egg yolk(s)**, sugar, and salt.
  4. Stir in the rice flour and smooth out any lumps. Set aside for 15 minutes.
  5. Dip the rice sheets, one at a time, into the batter, and drop them into the preheated oil. Fry until golden brown, 6 minutes if using 2 yolks at 360ºF, or 4 minutes using 1 yolk at 375ºF.

Tips

*For the rice flake sheet, I couldn't find Three Ladies Brand. So, I used Double Chicken Brand, but I'm not sure if it's safe for those with gluten intolerance. The ingredients are only rice flour and water, but I cannot guarantee them to be free of cross-contamination of gluten. Three Ladies brand is often used by those with gluten intolerance without any side effects.

**Use 1 egg yolk for light chips and 2 egg yolks for brown chips. Using 2 yolks also speeds up the frying time as it browns faster. The photo shown used 2 egg yolks and fried at 360.

Variation: Add chili powder and or paprika for color and flavor.
