I adore Indian food; therefore, you’ll always find a Gluten Free Indian Recipes on this site. I usually make spicy Indian rice, but this basmati rice recipe can be made mild or spicy. If you have children or your digestive tract is still healing, a mild version is ideal. Either way, this rice is full of authentic Indian flavorful and color. Enjoy!

Gluten Free Indian Rice (Mild or Spicy)

Yield: Serves 4/makes 3 cups of cooked rice

A mild or spicy recipe for basmati rice, made with typical Indian spices that anyone would enjoy. It is full of flavor and color.

Ingredients:

  • 1 cup basmati rice (or white rice)
  • 3 cups gluten free low-sodium chicken broth (Better Than Boullion, HerbOx, O Organics, 365 Organic or homemade)
  • 2 Tablespoons butter (or ghee or oil)
  • 2 to 4 Tablespoons shredded carrots (optional)
  • 1 teaspoon ground turmeric
  • 1 3 1/2-inch cinnamon stick
  • 6 whole cardamon pods, lightly crushed with side of knife
  • 6 whole cloves
  • 1/2 teaspoon sugar (or stevia equivalent)
  • Salt, to taste
  • 1/2 red pepper (or 1/4 teaspoon dried red chili peppers), for spicy heat (optional)
  • 1 sprig of parsley, for garnish

Instructions:

  1. Rinse rice under cold running water until the water runs clear. This removes the excessive starch which prevents stickiness.
  2. Add broth, butter, spices and sugar/stevia; and allow to rest for 30 minutes.
  3. Bring to a boil over medium-high heat, uncovered.
  4. Cover, lower heat to low, and cook for 15 to 20 minutes or until liquid the rice absorbs all of the liquid.
  5. Remove whole spices and discard. (They will most likely have all floated to the top.)
  6. Add any meat such as pieces of tender chicken or beef; and toss gently. Serve immediately.
