If you looking for soft gluten free chocolate chip cookies, you’ve come to the right place. If you prefer firm cookies check out my previous Gluten Free Chocolate Chip Cookies made with a bit of almond flour. While this recipe is delicious, I favor the almond flavor a bit more. If you have access to superfine rice flour, I highly recommend using it over regular rice flour, as the regular is quite gritty. See the tip section to prevent a bit of this gritty flavor. Meanwhile, enjoy!

Soft Gluten Free Chocolate Chip Cookies

Yield: Makes approximately 22 large cookies.

A soft gluten free chocolate chip cookie, just like their gluten cousins!

Ingredients:

  • 1 cup + 2 Tablespoons (2 1/4 sticks) unsalted butter, extremely soft (or Earth Balance Spread for dairy-free)
  • 1 1/4 cups sorghum flour
  • 3/4 cup cornstarch
  • 3/4 cup potato starch
  • 2 teaspoons xanthan gum
  • 2/3 teaspoon fine sea salt
  • 1 teaspoon baking soda
  • 1 cup + 2 Tablespoons dark brown sugar
  • 1 large egg
  • 2 egg yolks
  • 1 1/2 teaspoons pure vanilla extract
  • 10 oz. semisweet chocolate chips (dairy-free if needed - Enjoy Life)

Instructions:

  1. Whisk together dry ingredients to a medium size bowl and set aside.
  2. Add the butter and brown sugar to bowl of your mixer. Using the paddle attachment, cream together for about 1 minute, scraping sides of bowl as needed. Add egg, yolks, and vanilla; cream together for about 1 additional minute.
  3. Slowly add in the flour blend and mix for about 1 minute, scraping sides of bowl as needed. Add in the chocolate chips mix to distribute well.
  4. Place the dough in the freezer for 10 minutes. Using a spoon stir. Freeze for an additional 10 minutes or until firm.
  5. Preheat the oven to 350°F.
  6. Using a 2 1/2 tablespoon ice cream scooper, add mounds of dough to an ungreased cookie sheet. Flatten with the palm of your hand to 3-inch rounds.
  7. Bake for 14 minutes or until bottom edges are brown.

Tips

If you desire chewy cookies try adding more sugar. If they're not chewy enough, next time add additional butter.
