Gluten Free Chocolate Pretzel Bark

Make a crunchy pretzel brittle filled with pretzels and covered with chocolate or skip the hard brittle altogether. Whether you decorate this gluten free chocolate pretzel bark with Halloween, Easter, or Valentine decorations, or leave plain, they make a delicious dessert as well as a gift. The combination of sweet and salty is not easy to resist. Enjoy!

Gluten Free Chocolate Pretzel Bark

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 1 hour, 25 minutes

Yield: Makes 12 servings

A sweet and salty temptation that is hard to resist or stop eating, for that matter. Serve this gluten free chocolate pretzel bark to everyone!

Ingredients:

  • 1/2 pound (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon light corn syrup
  • 1-1/2 to 2 cups gluten free pretzels, twists or sticks (Glutino's)
  • 1 cup gluten-free milk chocolate or semi-sweet morsels (Hershey's) (or your favorite chocolate, chopped)

Instructions:

  1. Line a baking sheet with parchment paper or silicone baking mat (or use a nonstick baking sheet); set aside. Scatter the pretzels around the center, leaving blank space about 3-inches on the outside.
  2. Melt butter with the sugar, syrup, and water in a non-stick skillet over medium-high heat. Stir often. Bring to a boil. Once the butter melts, cook for about 10 - 15 minutes or until the mixture becomes amber in color (see below photo of my almond version for the amber color.) You will know when it is done when you really cannot stir it anymore, but it just moves about the pan as one piece. Remove skillet from heat and immediately pour over the pretzels on the baking sheet.
  3. Spread the mixture evenly using a wooden spoon or silicone spatula.
  4. While it is still hot, add chocolate chips and spread evenly on top. It will melt as you are spreading it.
  5. If using candy decorations, be sure they're gluten free or use [Royal Icing||https://glutenfreerecipebox.com/gluten-free-royal-icing-recipe/] or Fondant to make and color your own.) Add immediately before the chocolate sets.
  6. Place in the refrigerator to speed up cooling.
  7. Once cooled move to a chopping board. Using a butcher knife slice in long strips and then cut into smaller pieces.

Tips

Candy Decorations: Some of Wilton candy decorations may contain gluten cross-contamination. Plain, peanut, and many other M&M's are gluten free.

You can also omit the hard brittle and double or triple the chocolate and melt them opinion a heatproof bowl over a saucepan of hot simmering water. Then our it over the pretzels.
