So many gluten free French bread recipes call for tapioca. Tapioca is usually used because it is known for its chewy texture and high rise.
However, you want French bread to be chewy, but not gummy like tapioca creates. A little tapioca flour goes a long way. I did not use any tapioca flour in this recipe and it turned out so well. I can’t believe that I was able to achieve this texture without dairy! I can’t wait to make this for my gluten-eating guests! They won’t believe it’s gluten free and neither will you!
