This gluten free mexican casserole couldn’t be easier or fast to prepare. The sausage cooks in about 3 minutes. If you use package shredded cheese, it speeds up the process and clean up. You can even prepare the individual ingredients ahead of time, separately, and layer right before baking. It’s great for a weeknight meal for the working individual. Enjoy. We did, as it was a refreshing change.

Gluten Free Mexican Casserole with Green Chile Enchilada Sauce

An easy, yet flavorful Mexican casserole with green enchilada sauce and turkey or pork sausage. Make it hot or mild.

Note: La Victoria brand green enchilada sauce contains MSG. I am not sure what from what source the modified food starch is dervied.

Ingredients:

  • 3 cups (12 oz.) uncooked gluten free penne pasta (Trader Joe's)
  • 4 (mild or hot) (pork or turkey) gluten-free Italian sausages*, casings removed (dairy-free brand, if needed)
  • 3/4 cup mild gluten free green (or medium or hot) enchilada sauce (La Victoria)
  • 8 oz. Monterey Jack cheese (or Daiya or Follow Your Heart brands for dairy-free), shredded

Instructions:

  1. Bring a large pot of water to a boil; add oil; add pasta; cook according to directions.
  2. Preheat oven to 350°F.
  3. While pasta is cooking, brown sausage in a heavy skillet. Turkey sausage may need a preoiled and preheated skillet. If using pork sausage, drain any excess grease; set aside.
  4. Drain pasta; place half in a 9 x 13-inch casserole dish; layer with half the sausage, half the enchilada sauce, and half the cheese, in that order; repeat with second layer.
  5. Bake for 20 minutes or until cheese is melted. If you desire a crisp crust on top, place under broiler for a minute or so. Serve warm; cover and refrigerate left overs.

Tips

Variation: If you'd rather use left over chicken or turkey, add some sauteed onion and red pepper flakes. Add the pepper flakes to the oil and onion when sauteing. It could be corn.

      It actually is dairy-free. I had added Daiya brand cheese as a substitute for regular Jack cheese, which is dairy-free. To make it more clear I have not only added another brand that I just learned about that is fantastic, but added the words "for dairy-free". In addition, I suggest using a brand of sausage that is dairy-free, such as Applegate brand. Applegate is also casein-free.

      I hope this helps clarify things for you.
