*You may substitute 2 tablespoons butter or 1 tablespoon granulated sugar plus 1 tablespoon vegetable shortening for the egg yolks.
As an alternative filling, you can fill them with either the agave caramel recipe, caramel fudge, or dulce de leche recipe.
To make softer cookies, use half starch and half flour, and substitute the oil for butter.

I tried this recipe and the oreo recipe going sugar-free. This one was tricky. I just used stevia in the raw, the dough was very crumbly. I couldn't roll it out. So, I broke it up and added one egg white and 2 tblsp. more smooth peanut butter in the dough. Good results, another great recipe to convert to sugar-free for those who want it.
This Nutterbutter recipe is just what my gluten free diet has been missing. I definitely plan on baking a batch. Can you please just confirm if the sugar amount....it os supposed to read 1 1/2 cup or just the 1/2 cup for the entire recipe? Thanks
