Gluten Free St. Patrick’s Day Cookies (with Dairy Free Options)

You can make one of my favorite gluten free cookie recipes for St. Patrick’s Day and cut them into your desired shapes. They don’t have to be cut into clovers if you don’t have a clover cookie cutter. Any shape will do. How you decorate can turn them into a festive treat. Choose from gingerbread (shown), buttery cut-out, or crunchy chocolate cookie recipes. I like the idea of gingerbread cookies for the “ginger” (red-head) in your life for St. Patrick’s Day or for anyone!

Dairy-Free Choice:

The Crunchy Chocolate Wafers Recipe is also dairy-free, without the chocolate coating unless you use Enjoy Life Mini Chocolate Chips. To make the other cookie recipe options dairy-free, consider using organic palm oil (best substitute). Alternatively, use Earth Balance Buttery Baking Sticks (not the soft margarine in the tub.)

Egg-Free:

Substitute each egg with 2 tablespoons liquid from a can of white kidney beans + 1 tablespoon fat (oil or butter as indicated in the recipe).

Food Coloring:

I like to use natural food coloring whenever possible (Seelect Tea). For vibrant colors and also dairy-, peanut-, and nut-free, AmeriColor Gel is great.  They do not produce any gluten, nuts, peanuts, or animal products  in their facilities.   They manufacture  other products which contain other allergens on separate lines. All their products are gluten-free. Then, lastly, liquid McCormick. They’re all gluten free.

Cook Time: 30 minutes

Total Time: 2 hours

Yield: Up to 3 Dozen

Choose from three gluten free cookie recipes: buttery cut-out, crisp chocolate, or gingerbread to make delicious Gluten Free St. Patrick's Day Cookies.

  1. Make the cookies according to the instructions at one of the above links.
  2. Make the Royal Icing, which you may separate into dishes and color each differently. You can also use the frosting to pipe out designs.
  3. If desired, you may cover the cookies with gluten fere fondant, either homemade (see above link) or the Satin Ice brand.
