Nature’s Path sent me a couple of boxes of their new Qi’a Hot Oatmeal in Creamy Coconut flavor. I don’t usually enjoy coconut in my oatmeal; therefore, I had to find another use for it. I love coconut in granola and used it for that. I also usually use plenty of superfoods in my granola. This was so easy to make because Qi’a Hot Oatmeal already contains many of them. This was my first experiment making vegan granola, though, as many vegans do not consume honey. I enjoyed it and hope you do, as well.

Gluten Free Vegan Granola Recipe

Yield: Makes 6 cups

Whether you are vegan or not, this gluten free vegan granola recipe is a healthy choice. It omits sugar of any kind and omits high processed honey. Enjoy it as a snack or with dairy free milk as a breakfast choice.

Ingredients:

  • 6 envelopes/1 box Nature's Path Qi'a Hot Oatmeal Creamy Coconut (about 2 1/2 cups)
  • 1/2 cup slivered almonds
  • 1/2 cup chopped walnuts
  • 1/4 cup pistachio nuts
  • 1/4 cup sunflower seeds
  • 1/4 cup flax seed meal (I used a 50/50 mixture of golden and brown)
  • 1/8 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup oil (coconut, canola, extra light olive)
  • 1/4 cup pure maple syrup
  • 1/4 cup agave syrup (or more maple syrup)
  • 30 drops NuNaturals Vanilla Stevia
  • 1 cup unsweetened dried cranberries (or raisins or other unsweetened dried fruit)

Instructions:

  1. Preheat oven to 275 degrees.
  2. Combine oatmeal, almonds, walnuts, pistachio nuts, sunflower seeds, flax seed meal, and salt.
  3. In a separate bowl, combine oil, maple syrup, agave syrup and liquid stevia. (If desired, substitute the agave for additional maple syrup. It makes it sweeter and crisper. See the below photo where I used 5 packages oatmeal, 1-1/4 cups walnuts, 1/4 cup flax seed meal, 1-1/2 Tablespoons sesame seeds and 1 Tablespoon pistachio nuts.
  4. Add the liquid mixture to the dry mixture and stir to moisten all of the dry ingredients. Transfer to a rimmed baking sheet and bake for 30 minutes, stirring once midway through baking.
  5. Add dried fruit and stir to combine.
  6. Transfer to a cooled baking sheet or heat-proof bowl and allow to cool, uncovered.
  7. Serve as a snack or cereal. I enjoy it with homemade raw almond milk. Cover and store at room temperature for up to 1 week.
