How to Melt Chocolate for Writing On a Cake

This recipe reminded me that I needed to share this recipe on this site, as I assume there are many people who wouldn’t know where to start when it comes to writing with white chocolate on a chocolate cake. I avoid commercial tubes as most of them contain chemicals and artificial coloring. If that’s you, read on to learn what to add to chocolate to make it flow smoothly and easily. Melted Chocolate for Writing On a Cake

Prep Time: 10 minutes

Cook Time: 7 minutes

Total Time: 17 minutes

Yield: Makes enough to decorate a large sheet cake

An easy recipe for how to melt chocolate so that you can easily decorate birthday cakes like a professional.

Ingredients:

  • 1/2 cup gluten free chocolate chips (for white, I used Hershey’s Premier White Chips (Hershey’s ChipIts Pure White Chocolate Baking Chips in Canada)
  • 3/4 teaspoon neutral-flavored oil (I used lite olive oil)
  • 6 oz. Melting Decorating Squeeze Bottle

Instructions:

  1. Place 1 - 2-inches of water in a small saucepan and place over high heat to bring to a boil.
  2. In a heat-proof bowl, large enough to fit over the saucepan, add the chocolate and oil.
  3. Once the water boils, lower the heat to a lower simmer.
  4. Cook chocolate and oil until it almost melts. Once only a few morsels are left unmelted, remove the pan from the heat and stir it until they all melt.
  5. Transfer melted chocolate to a decorating bottle and set aside for a few minutes or until the bottle is easily held. Once it reaches room temperature, use it to write messages cakes. I wrote on a frozen one and refroze until the night before the birthday. Then defrosted the cake overnight while covered.
  6. Place the cap on the bottle and refrigerate until the next time you need to decorate a dessert plate or cake. Then rewarm in simmering hot water just until slightly melted. Be careful not to melt the plastic.
