This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Spinach Rice

Yield: Makes 6 servings as a side dish; 2 as a meal

Spinach rice is a great way to get your family to eat spinach. The oil or butter and seasoning hides the bitter taste of the spinach to make it palatable for those frowning faces.

Ingredients:

  • 1 package spinach, frozen, and/or other vegetables
  • 2 Tablespoons oil or butter, divided (I used Allergy-Free Margarine)
  • 2 eggs, beaten
  • 1/2 cup yellow onion, chopped
  • 4 cups cooked white or brown rice
  • Salt and pepper, to taste
  • Gluten free soy sauce or a few dashes of turmeric

Instructions:

  1. Cook spinach according to directions, either steamed or microwaved. You may also steam it. Ensure all water is drained and then chop in small pieces.
  2. Add 2 teaspoons oil or butter to a frying pan; preheat to medium-high; and scramble eggs. Set aside to cool, and chop.
  3. Add remaining oil or butter and preheat again at medium temperature. Add onion and saute until tender.
  4. If using left over, cold, rice, add to pan and stir occasionally until warm; add chopped eggs, chopped spinach; stir; sprinkle turmeric, salt and pepper to taste. Or skip the turmeric and add soy sauce. Add additional oil or butter, if desired.

Tips

You may not need the entire package of spinach. It all depends upon your tastes.
