Viviana Foods sent me a few of their gluten free pasta varieties to review and to host a giveaway. Yeah! I love giving away free stuff! Their pasta is available in four shapes, linguni, penne, fettuccine, and orzo. Most of these shapes are very difficult to find. All of their products are tested on a monthly basis to be under 5 parts per million (ppm) gluten; and they are certified by the GIG (Gluten Intolerance Group of North America). My Review of Viviana Gluten Free Pasta and Ingredients
I cannot tell you how much flavor Viviana’s gluten free pasta contains. You really don’t need a heavy flavored sauce with them, though they taste great either way. The texture of all of the pasta was supreme! Read on to learn more.
Garlic Toasted Onion Fettuccine
I made my Gluten Free Chicken Alfredo recipe with the Garlic Toasted Onion Fettuccine, and it was to die for! It has been my favorite, fast dish lately, but with this pasta, it exceeded my earlier delight.
Ingredients: Rice Flour (Brown and White Flour), Eggs (Whole Eggs and Egg Whites), Xanthan Gum, Garlic, Onion, Olive Oil.

Gluten Free Sweet Potato Orzo
I haven’t had orzo in almost a decade. While I have never had a flavored orzo, I surely enjoyed this one! I immediately noted the taste of nutmeg, which compliments the sweet potato extremely well. Since I’ve had an overwhelming schedule lately, I really appreciated that it only took 7 minutes to cook. You don’t need to add anything but a bit of salt, but I added just a bit of butter after it was cooked. It was wonderful.
Ingredients: Rice Flour (Brown and White Flour), Sweet Potato, Eggs (Whole Eggs and Egg Whites), Xanthan Gum, Nutmeg, Annatto Seeds, Olive Oil, Cinnamon.

Gluten Free Spinach Basil Garlic Linguini
Again, I used my Gluten Free Chicken Alfredo sauce with this recipe, while my husband enjoyed it with my Authentic Italian Gluten Free Spaghetti Sauce. (I’m allergic to tomatoes.) We both thoroughly enjoyed it.
Ingredients: – Rice Flour (Brown and White Flour), Eggs (Whole Eggs and Egg Whites), Xanthan Gum, Garlic, Spinach, Basil, Black Pepper, Olive Oil.

Italian Blend Penne Pasta (LINK)
This blend is very unique as it contains three separate flavors of pasta in this the same package. One contains tomatoes, and the other basil, and another, garlic. I picked some fresh basil from yard and made my Basil Almond Gluten Free Pesto Sauce recipe. Oh my goodness! What flavor! It smells like ravioli when you cook this blend. Since I’m allergic to tomatoes I separated the pasta, and my husband had some of the tomato flavored penne along with the others, and I just had the garlic and basil flavors. It made a wonderful compliment with the almond pesto. You’ll have to try it yourself soon.
Ingredients: Rice Flour (Brown and White Flour), Eggs (Whole Eggs and Egg Whites), Xanthan Gum, Tomato, Garlic, Extra Virgin Olive Oil, Basil, Black Pepper.
This is the only variety of penne pasta Viviana makes.
