Pan Fried Cauliflower (Naturally Gluten Free)

Ingredients:

• 2 Tablespoons extra virgin olive oil
• 1 Tablespoon minced garlic
• 1 head cauliflower, broken into florets (4 to 5 cups)
• 3 Tablespoons cold water
• 1 teaspoon granulated or vegan sugar
• 1/3 teaspoon ground white pepper
• Pinch of fine sea salt
• 2 scallions (green onions), whites only, sliced thinly

Instructions:

1. Preheat a wok or large, deep saute pan over medium-high heat with oil.
2. Add the garlic to the pan and distribute the oil.
3. Add the cauliflower and toss or constantly flip with a spatula or spoon to ensure that many sides brown. Cook for about 90 seconds. Add the water, sugar, pepper, salt, and scallions. Cook for about 2 minutes and until the cauliflower is tender but still has some crunch, tossing/stirring often.
4. Transfer the cauliflower to a serving bowl and serve warm.
