Fried Cauliflower (Naturally Gluten Free)

Yield: Makes 6 servings.
A quick and easy, yet flavorful fried cauliflower recipe, for a pleasant change.
Ingredients:
2 Tablespoons extra virgin olive oil
1 Tablespoon minced garlic
1 head cauliflower, broken into florets (4 to 5 cups)
Preheat a wok or large, deep saute pan over medium-high heat with oil.
Add the garlic to the pan and distribute the oil.
Add the cauliflower and toss or constantly flip with a spatula or spoon to ensure that many sides brown. Cook for about 90 seconds. Add the water, sugar, pepper, salt, and scallions. Cook for about 2 minutes and until the cauliflower is tender but still has some crunch, tossing/stirring often.
Transfer the cauliflower to a serving bowl and serve warm.
