Ingredients:
1 lb. brussel sprouts, stem ends cut off and sliced in half
3 slices gluten free bacon (Applegate or Hormel Black Label)
1 Tablespoon olive oil
Salt, to taste
Freshly ground pepper blend (lots for spice)
Instructions:
Cook bacon in a heavy skillet, drain slices on a paper towel-lined plate and set aside to cool.
Set heat to medium-high and add brussel sprout halves to same skillet, flat side down. Lower heat to medium-low, cover the skillet and cook for 10 to 15 minutes or until caramelized.
While the sprouts cook, chop the cooked bacon. Once the sprouts are cooked, add the bacon back into the skillet. Toss both sprouts and bacon together and season with salt and pepper. Serve immediately or refrigerate and reheat in an oiled skillet before serving.
