Gluten Free Chicken Adobo

Ingredients:

• 1 Tablespoon neutral-flavored oil
• 2 lbs. chicken drumsticks or thighs (skinless, recommended)
• 1 medium onion, thinly sliced
• 2 large garlic cloves, minced or grated
• 4-inch long piece fresh ginger, grated
• 3/4 cup Gluten Free Soy or Tamari Sauce
• 1/2 cup white distilled vinegar
• 1 cup water, or just enough to cover chicken
• 2 large bay leaves
• 1/4 teaspoon ground black pepper

Instructions:

1. Preheat a large skillet over medium-high heat. Add oil and swirl it around
2. Add chicken pieces and brown on both sides. Transfer it to your crockpot or large pot.
3. Add sliced onion to the same skillet and and deglaze the pan by scraping the bottom as you stir the onion. Once the onion is nicely browned and tender, after about 5 minutes, transfer the onion to the crockpot.
4. Add garlic, ginger, soy sauce, vinegar, water, bay leaves and pepper. Turn power on and the temperature setting to low. If cooking on your stovetop, simmer on medium-low heat for about 45 minutes or until chicken is fall off the bone tender.
5. Remove and discard bay leaves. Serve the chicken and onions, or just the chicken, with rice and your favorite vegetable or salad. Chicken adobo also makes an excellent filling in my Gluten Free Lumpia. Just shred the chicken by pulsing it in a food processor or by hand.
