I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot. Enjoy!

Gluten Free Chicken Adobo

An adobo chicken recipe, which is easily made gluten free by using gluten free soy sauce. A favorite filipino dish, but enjoyed by all.
Ingredients:
1 Tablespoon neutral-flavored oil
2 lbs. chicken drumsticks or thighs (skinless, recommended)
Preheat a large skillet over medium-high heat. Add oil and swirl it around
Add chicken pieces and brown on both sides. Transfer it to your crockpot or large pot.
Add sliced onion to the same skillet and and deglaze the pan by scraping the bottom as you stir the onion. Once the onion is nicely browned and tender, after about 5 minutes, transfer the onion to the crockpot.
Add garlic, ginger, soy sauce, vinegar, water, bay leaves and pepper. Turn power on and the temperature setting to low. If cooking on your stovetop, simmer on medium-low heat for about 45 minutes or until chicken is fall off the bone tender.
Remove and discard bay leaves. Serve the chicken and onions, or just the chicken, with rice and your favorite vegetable or salad. Chicken adobo also makes an excellent filling in my Gluten Free Lumpia. Just shred the chicken by pulsing it in a food processor or by hand.
