Gluten Free Easter Cheesecake

If you’re making a gluten free cheesecake for Easter or Passover, give this easy gluten free recipe decorating idea a try. It may be applied to any gluten free cheesecake recipe or regular cheesecake for that matter. It brings a little color to the table! Kids love it! You can even let them help.

Yield: Serves 10-12

Transform any gluten free cheesecake, or any cheesecake, for that matter, into a colorful centerpiece for your Easter or Passover table.

Ingredients:

1 Gluten Free Mint Chocolate Cheesecake (without the mint) or Gluten Free Cheesecake-Layered/ (without the ganache topping) (or your favorite recipe)
Food Coloring*

Instructions:

Make the Chocolate Cheesecake recipe, but when reserving the 1/4 cup of batter, divide the reserved batter into three portions, in separate cups. Add one drop of food coloring (your choice of colors) into each cup and stir. Add additional drops, one at a time and stir, until you achieve your desired color.
Rather than drop or stir randomly, you may create circles within circles on the top of the cheesecake and then with a toothpick or skewer, create little lines, towards the center or towards the outside, with the skewer/toothpick to create an almost web-like or scalloped design.

You can make your own natural food coloring by whipping in some juice of some berries for pinks, purple and lavender. Or you can add just a tiny bit of turmeric for yellow. The sweetness of the cheesecake covers the turmeric flavor. Beet juice or raspberry juice make a nice fuschia. A little carrot juice makes a nice peach, as well. Use a bit of avocado for green.

To create the green around the yellow or pink as I did in the photo, just add some green batter, and then add some pink or yellow on top, but thinner. Then when you drag a toothpick or skewer through them, just drag the top color and the rest should follow. Be sure to go deep enough to drag them both.
