You can make your own natural food coloring by whipping in some juice of some berries for pinks, purple and lavender. Or you can add just a tiny bit of turmeric for yellow. The sweetness of the cheesecake covers the turmeric flavor. Beet juice or raspberry juice make a nice fuschia. A little carrot juice makes a nice peach, as well. Use a bit of avocado for green.
To create the green around the yellow or pink as I did in the photo, just add some green batter, and then add some pink or yellow on top, but thinner. Then when you drag a toothpick or skewer through them, just drag the top color and the rest should follow. Be sure to go deep enough to drag them both.
