If you have diabetes or are borderline diabetic, you may find making gluten free diabetic recipes difficult. It really isn’t difficult at all. During the holidays, those with diabetes, whether on a gluten free diet or not, may wish to use a sugar substitute in their gluten free recipes. That is a good start to cutting back on sugar.

If you can tolerate sugar alcohols, such as those that end in “lol”, I suggest using xylitol. (NOTE: Xylitol is harmful to animals.) Though I prefer and suggest using one that is derived from birch over those derived from corn. You may wish to read my article, What is Xylitol? A Natural Sugar-Free Sweetener That Tastes Like Sugar. The article not only explains what xylitol is, but provides links to brands of birch derived xylitol which I ran across in my research on the subject. I avoid corn derived xylitol because most corn products are GMO (genetically modified organism) – (not natural). Xylitol can be used cup-for-cup to replace sugar in all gluten free recipes, or any recipe.

If you’re going to add sugar to your gluten free desserts, consider unrefined sweeteners such as honey, molasses, agave, and more.

Gluten free products and recipes are often high in carbohydrates, therefore, you should consider using whole grain flours in your gluten free recipes.

But the best thing you can do, which you are probably already aware of, is to eat lots of whole foods, rich in fiber, such as legumes, fresh vegetables and fruit. The more modern approach is to eat a vegetarian or vegan diet. And if you have high cholesterol in addition to diabetes, this would ideal for you. Of course, there are those who need high protein, therefore, always check with your physician before changing your diet. But I’ve heard really good things about diabetics on a low-fat, vegan diet.

Dr. Neal Barnard has a wonderful cookbook, The Get Healthy, Go Vegan Cookbook, which is not gluten free, and he has helped numerous diabetics with his philosophy on lowering blood sugar levels. Eating a vegan or vegetarian diet can be quite delicious, if you have the right recipes. See just a few gluten free diabetic recipes listed below:

And yet another new approach to reversing diabetes is by eating a raw food diet. See the Raw Gluten Free Recipes category, though I find most raw recipe desserts to be high in sugar and carbohydrates.

  • Your suggestion of the use of sugar-alcohols was incomplete. For those of us with Celiac disease, our intestines can be VERY sensitive and all the sugar alcohols are very likely to cause stomach upset/diarrhea.
    Have you researched Stevia or Monkfruit? These are natural sweetners derived from plants (for the stevia) & fruit (the monkfruit) with little or no caloric content.

      Yes. I have researched stevia. I use it in several of my gluten free recipes. Just search for the word "stevia" in the top-right search box of most pages to discover recipes using stevia.
