I’ve never been a fan of gingerbread cookies or houses when I consumed gluten, probably because people like to make them sturdy, which means dry in my book. This recipe is pretty sturdy, but moist inside. I love them. Last year, you couldn’t stop me and my husband from grabbing a piece of the gluten free gingerbread house I made using the same recipe. Delish! However, houses are a lot of work. Why not make a tree instead? If you’re ambitioius, make both!

Yield: Makes 1 tree with a few cookies leftover

A simpler alternative to making a gingerbread house is this making this beautiful gluten free cookie gingerbread Christmas tree..The cookies are soft inside and delicious!

Ingredients:

Instructions:

  1. Decide what you're going to use for a base. It doesn't have to be edible, but it definitely needs to clean. You'll use icing to glue the first cookie to the base. Place the largest star on top of the base to decide what works best. Set it aside.
  2. Make the cookie dough in the above linked recipe for gingerbread cookies. Cut out the dough using different size star-shaped cookie cutters. Make 2 cookies the same size and progressively make the 2 cookies for each smaller size.
  3. Make the icing of choice at one of the above links. Using the icing as glue, attach gluten free candy decorations to some of the tips of the star cookies. Set aside until set.
  4. Stack the cookies and glue them together using the icing. Be sure that the tips alternate between each cookies as illustrated in the photo. You can also use the icing to decorate the top star cookies. Glue 2 tiny stars together and use for the top star.  Set aside until fully set, overnight is preferable.
  5. Just prior to displaying, dust the tree edges with confectioners' sugar. (If your house is humid, confectioners' sugar can melt easily.) I find it is easiest and prettiest to dust it from over the very top.
