Wow! This bread reminds me of eating French toast without even making any! I ate a piece, slightly warm, after baking and couldn’t stop eating it! A must try. Check out the texture of this oat bread in this video. It has a gluten-like texture, but more flavorful!

This recipe sounds delicious and your video texture looks amazing. I made it but it was like cake batter to pour into the pan. I checked and rechecked the ingredients and I didn't leave anything out. It's been in a warm place for about 40 minutes and I'm pretty sure it isn't going to rise to the rim of the pan. I will bake it anyway just to see what happens. Is there an ingredient missing from your recipe?
Ruth,
The only ingredient that if left out would cause this bread recipe to turn out like cake batter is xanthan gum. The gum gives the bread structure. Perhaps you only used 1 teaspoon instead of 1 tablespoon??? Meanwhile, how did it turn out?
