This recipe for gluten free St. Patrick’s Day cookies is incredible! They’re in between a shortbread and sugar cookie. Shortbread cookies contain more butter than sugar cookies which makes them a bit softer and richer. Everyone loves these cookies. Adding a little green or Irish theme makes them that more special.

If you don’t wish to make Royal Icing, you can also make a glaze known as confectioners’ icing or apply rolled gluten free fondant. I don’t care for the texture of fondant.

By the way, if you don’t have any meringue powder on hand, and it’s too late to order any online (you can also find it at Sur La Table stores), you’ll find that I have updated the Royal Icing recipe to now contain a pasteurized egg whites substitute.

Gluten Free St. Patrick’s Day Cookies

Yield: Makes 30 - 32 cookies

Incredibly delicious gluten free St. Patrick's Day cookies to bring some Irish cheer to your celebration.

Ingredients:

Instructions:

  1. Make the cut-out cookies as instructed in the above link.
  2. While the cookies cool, make the royal icing.
  3. Apply the royal icing to one cookie using a pastry bag, even to fill most of the top layer of a cookie. To fill the top layer, trace the area with a thin line of icing. Then fill in the rest using a larger tip. Alternatively, make a add a layer of fondant. Glue the fondant shape with a bit of fondant mixed with a little water.
  4. If you prefer the decorations to protrude from the top surface, set the cookies aside to dry before applying the decorations.Use wet icing to glue any decorations, if needed.
  5. For a blended look much like a porcelain tile, decorate the cookie while the icing is still wet, using a different color. While both the surface icing and the decoration are still wet, pick up the cookie and shake it to blend both colors. Set them aside to dry.
