This recipe for gluten free St. Patrick’s Day cookies is incredible! They’re in between a shortbread and sugar cookie. Shortbread cookies contain more butter than sugar cookies which makes them a bit softer and richer. Everyone loves these cookies. Adding a little green or Irish theme makes them that more special.

If you don’t wish to make Royal Icing, you can also make a glaze known as confectioners’ icing or apply rolled gluten free fondant. I don’t care for the texture of fondant.
By the way, if you don’t have any meringue powder on hand, and it’s too late to order any online (you can also find it at Sur La Table stores), you’ll find that I have updated the Royal Icing recipe to now contain a pasteurized egg whites substitute.
