How to Make Grass Frosting & Gluten Free Green Frosting Recipe

Easter is a month away, but I wanted to provide you with this frosting recipe and instructions on how to make grass frosting ahead of time. I’m in the Easter spirit already. This way, you have plenty of time to have your supplies on hand when Easter arrives. You can even practice beforehand. Be sure to check out the video from Wilton below the recipe. How to Make Easter Grass Frosting & Gluten Free Green Frosting Recipe

Yield: Appx. enough frosting to frost 1 dozen cupcakes

A bright green gluten free frosting recipe and instruction on how to make Easter grass frosting for loads of fun and in the spirit of the holiday.

Ingredients:

  • 1/2 cup (1 stick) butter (or gluten-free margarine or Earth Balance spread)
  • 1/4 cup solid shortening (I used organic palm)
  • 1/2 teaspoon pure vanilla extract
  • 2 cups confectioners' sugar, or as needed (Trader Joes' organic is corn-free)
  • 3 1/2 teaspoons milk of choice, or as needed
  • Gluten-free green gel food coloring (gel creates brighter colors)

Instructions:

    To Make the Frosting:
  1. In the bowl of your electric mixer, beat butter and shortening together until fluffy.
  2. Gradually sift in confectioners' sugar, and mix on medium speed until it is thoroughly combined before adding more. Scrape bowl after each addition. When adding the last addition of sugar also add the vanilla. (For hand electric mixers, alternate milk and sugar.)
  3. Gradually add milk and food coloring, and beat at medium speed until fluffy. Test for proper consistency by touching it with the back of a spoon and pulling away at an angle. The frosting should not be dry, but hold a curve.
  4. To Make the Grass:
  5. Fit your decorating bag with No. 233 grass/multi-opening decorating tip (my preference) (or a No. 18 star tip; and fill bag half full with frosting.
  6. Hold the decorating bag straight up with the tip about 1/16-inch away from the surface of the decorating surface.
  7. For a cake or cupcake, begin in the middle of its surface. Of course, you can decorate borders or other treats, as well. Squeeze the bag and lift up and when the strands are long enough, about 1/2-inch, stop squeezing the bag, withdraw slightly straight up and then jerk the bag quickly to the left or right.
  8. Repeat above step, close to the previous frosting, covering the entire middle surface.
  9. Once the middle section of your dessert is covered, begin to pull away left or right so that the blades of grass are curved.

Tips

To make sugar-free confectioners' sugar, grind 2 cups of your favorite cup-for-cup sugar substitute in a food processor until it forms into a fine powder. Then mix with 2 teaspoons of starch (corn, potato or tapioca)
