I love these gluten free shortbread cookies. They’re a tad different as they have a bit of an Italian flare. They are also firmer than traditional shortbread, which breaks apart easily. I’m sure you’ll love them as even gluten-eaters do. If you prefer a traditional version, I’ve included a recipe for those as well.

Gluten Free Valentine’s Day Cookies

Yield: Makes 2 dozen cookies

Make these delicious shortbread cookies for Valentine's Day for your special someone. Then decorate them with icing and/or fondant.

Ingredients:

Instructions:

  1. Make the cookies according to the instructions at the above link.
  2. Frost the cookies using the royal icing, which you may separate and color each differently. You can also use it to pipe out letters/writing or designs.
  3. If desired. You can cover cookies in fondant, either homemade (see above link) or the Satin Ice brand.
