I love these gluten free shortbread cookies. They’re a tad different as they have a bit of an Italian flare. They are also firmer than traditional shortbread, which breaks apart easily. I’m sure you’ll love them as even gluten-eaters do. If you prefer a traditional version, I’ve included a recipe for those as well.
Gluten Free Valentine’s Day Cookies
Make these delicious shortbread cookies for Valentine's Day for your special someone. Then decorate them with icing and/or fondant.
Ingredients:
- 1 recipe Gluten Free Shortbread Cookies or
- 1recipe Gluten Free Cut Out Sugar Cookies
- 1 recipe Royal Icing, for frosting and decorations
- 1 recipe Gluten Free Marshmallow Fondant (or store-bought - Satin Ice) (optional)
Instructions:
- Make the cookies according to the instructions at the above link.
- Frost the cookies using the royal icing, which you may separate and color each differently. You can also use it to pipe out letters/writing or designs.
- If desired. You can cover cookies in fondant, either homemade (see above link) or the Satin Ice brand.
