Gooey Gluten Free Brownies Recipe

Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Gluten Free Nanaimo Bars without Coconut

With the hot weather we’ve been having, I thought I would make a no-bake dessert. Nanaimo bars are a Canadian treat. I substituted the traditional packaged pudding (or packaged pastry cream, depending upon brand) with gluten-free cream cheese (just 2 tablespoons). You can always use your own homemade custard. Mothers and grandmothers used to make these for their kids beginning in the 50’s and 60’s, and some still do. I made them without coconut, due to food allergies. Shredded coconut is usually used in the bottom layer. I substituted coarsely chopped almond meal. You can use regular. I just ground my own. Walnut Cranberry Gluten Free Granola Bars

You may have already seen my other Gluten Free Granola Bars recipe made with chocolate chips. This one we tweaked a bit by adding more walnuts along with the almonds.  ou can use any nuts you like, but using at least one soft nut is helpful for this recipe. Chewy Gluten Free Brownie Recipe

Gluten Free Chewy Brownies

This is my first stab at creating a gluten free brownie recipe. It turned out very chewy, just what I had in mind. They are not cake-like at all. I used potato starch in this one. Next time I may try using almond flour just because I love the taste of it, but this time I just added some chopped nuts. You can use your favorite nuts.
