I was honored with the task of developing a recipe for the KitchenAid 6-Quart Slow Cooker with Easy Serve Lid. The baker in me said it had to be a gluten-free baked good. With holiday season upon us I decided on a gluten free bread pudding, as it is a very versatile recipe. However, I baked the gluten free breadenter called for in this recipe in the slow cooker, as well. It rises and bakes right in the slow cooker, without any help from you. Just set it in, cover and bake, all in one step! How convenient is that? Continue reading “Crème Brûlée Gluten Free Bread Pudding in a Slow Cooker”
Stuffed Raw Zucchini Appetizers
In preparation for the upcoming holidays, I have begun my recipe development of new gluten free appetizers. During the holidays I tend to make rich, fattier appetizers, but I thought I’d go a bit healthier for a change. One can only tolerate plain vegetable platters for so long. This is my fancier version of a vegetable platter, with a bit of an Italian flair. It calls for zucchini slices, ricotta cheese, and basil. It makes a wonderful compliment when you’re serving other Italian dishes. Though it makes a beautiful presentation either way. Continue reading “Stuffed Raw Zucchini Appetizers”
Mascarpone Filled Gluten Free Cannoli Dipped in Dark Chocolate
I saw some regular cannoli in a bakery decorated so elegantly that my first thought was that I just had to make a gluten free version! They were filled with mascarpone cheese, which is a sweetened Italian cream cheese. The one thing I will never order in a bakery is pre-filled cannoli, as sitting there just makes the cannoli shell soft. Ordering ahead of time is the only way to go, but making them from scratch is even better. If you’re considering skipping the chocolate dipping step, consider that when dipped in chocolate cannoli stand up properly, instead of rolling over when served or displayed. Enjoy these luscious gluten free cannoli! Continue reading “Mascarpone Filled Gluten Free Cannoli Dipped in Dark Chocolate”
Gluten Free Red Velvet Cake and Cream Cheese Frosting
One of the many old traditions of red velvet cake is a southern one. During the Civil War families believed that baking a red cake would keep their men home, where it was safe. In this gluten free red velvet cake recipe, the “velvet” comes from its moisture, in this case the the additional eggs and oil. It is as moist and velvety as it looks. Enjoy! Holiday Gluten Free Mashed Potatoes
These gluten free mashed potatoes are to die for! A family member made these a few months ago and I was afraid to eat them, as I had no idea if the bacon was gluten free, but I found out that they included sour cream and cream cheese, as well. All of the guests were raving about them, and I just had to make them, gluten free. She had added some cheddar cheese to the top. I’ve added made these with cheese on top, inside, and without cheese. You just need to make sure all of your ingredients are gluten free, including the bacon, cream cheese and sour cream. You may mix in bacon or your favorite cheese. I like cheddar. I added crumbled bacon to to pof my gluten free mashed potatoes. I bet the left overs make wonderful potato pancakes! Just fry them cold with some butter. Yum! Can’t wait to try it!

Gluten Free Glazed Meatballs – All Beef
These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze. For the kids, I skipped the onion or garlic that I planned on using in this glazed meatball recipe, but used onion powder instead. Enjoy this gluten free glazed meatball recipe and your holidays!
