Duchess potatoes, also known as duchesse potatoes, are a French dish, pommes de terre duchesse, consisting of seasoned mashed potatoes, made stiffer than traditional mashed potatoes, with the addition of egg, in this case, egg yolks. They are piped using a piping bag or device, and browned just enough to accent the design. Most recipes call for heavy whipping cream, however, my recipe below is a lower-fat version, and may be made dairy-free. Now you’re the duchess. Gluten Free Turkey Divan
Another great way to make a turkey casserole with your leftover turkey from Thanksgiving is to make a gluten free turkey divan, which is a creamy casserole made with pasta, broccoli and cheese. The original version, chicken divan originates from a hotel in New York that served it long ago. What really makes this recipe, is the crunchy topping of bread crumbs. Gluten Free Casserole – Chicken Divan
You make a gluten free casserole fancy by making this chicken divan, a chicken casserole usually served with broccoli, almonds, and Mornay sauce (a béchamel sauce (basic white sauce) with cheese added). Chicken Divan was invented at and named after the old Divan Parisienne Restaurant in the New York Chatham Hotel, which is no longer in existence.
