Gluten Free Boston Cream Pie

I created a Gluten Free Boston Cream Pie recipe using my Self-Rising Cake Flour Blend Recipe a few years back. However, after publishing the Custard-Filled Strawberry-Topped Cake Recipe recently, it got me to thinking. It appears my Sponge Cake recipe truly is ideal for making a gluten free Boston cream pie recipe. It absorbs custard easily, making it super moist and tender. You can fill it with baked custard, which I prefer, or use packaged gluten-free pudding mix. You save an hour of baking using the pudding. Enjoy!

Gluten Free Apple Danish

Do you miss apple or cheese Danish? How about almond bear claws? If so, you will no longer crave them as this homemade, gluten-free version is better than store-bought Danish. They are not only puffy but flaky as well. My favorite filling is custard and apple pie filling.

Gluten Free Strawberry Custard Sponge Cake

This gluten-free strawberry custard cake is like Boston Cream Pie meats Tiramisu Cake meets Roulade (Roll Cake). It all starts with sponge cake. Sponge cake loves moist fillings as it softens the somewhat dry cake. They are the perfect marriage! You end up with a tender and moist cake versus soggy. The combination of custard and canned strawberry pie filling is a fantastic combination! It's a must try, whether you make a single or two-layer cake.

I occasionally try to improve upon my cream puff recipe, also known in French as pâte à choux. Though I already have a recipe for gluten free cream puffs on my website, the improvements made deserve a new post. They turned out incredible! My favorite filling is a mixture of whipped cream and custard (Bavarian cream). So yummy!

National Banana Cream Pie Day was a few days ago, and it got me thinking. Creating a gluten fee banana cream pie recipe wasn't high on my list of to-do's, but I became intrigued, and that was that. Before you knew it, I was surveying my Facebook friends on what types of crust they would enjoy. The 2 highest voted for were graham cracker, graham cracker coated with chocolate, and regular coated with chocolate. Since I already had all of those crust recipe here on this site, I decided to go for a shortbread crust for my own. However, I include links to all my gluten free pie crust recipes below, even the chocolate ganache coating. You may garnish the pie with whipped cream, meringue, or leave plain. Perhaps some shredded coconut would do for some. I hope you enjoy this recipe. I hadn't had a banana cream pie in decades and being a pastry cream lover, it's hard to believe. It was truly delicious!
