My site consists of three different banana bread recipes. There's something for everyone. My favorite recipe calls for my homemade Gluten-Free All-Purpose Flour Blend. Everyone always raves about this one, including those who are not on a gluten-free diet.
Then there's my latest recipe which calls for my Copycat Betty Crocker Yellow Cake Recipe. One person wrote in stating it was the best banana bread she's ever eaten. This recipe is perfect for you if you don't like to use superfine rice flour.
Carol Fenster shares her mini banana bread recipe (which you can also use a loaf pan) using her homemade sorghum flour blend recipe. It's perfect for those who are rice intolerant.
If you need a small batch recipe, try Donna Washburn and Heather Butt's Classic recipe. They use more whole grain flours in their recipes.
If you're interested in combining flavors, try adding a little pumpkin using Jules Gluten Free Flour Mix.
