Flaky Gluten Free Crust Filled with Beef

Many of my Facebook followers have requested that I develop a gluten free pie crust recipe that does not call for superfine rice flour. This one turned out flakier than any other pie crust on this site. I have used it to make mini gluten free chicken pot pies, regular size, as well as a gluten free peach pie. They all turned out delicious. You will find that refrigerating the dough once rolled makes transferring the rolled out dough to the pie much easier. I have included that tip as well as another below for ease in transferring the dough. Meanwhile, I hope you enjoy this recipe for many of your savory and sweet gluten free pies.

Image: Gluten Free Cherry Pie

Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband's fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from "Gluten Free Cooking For Dummies®".  Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had two cans of cherry pie filling, but really needed three for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. Comstock and Wilderness are gluten free, and at one time Walmart's Great Value brand was gluten free. Just check.

Fluffy Gluten Free Biscuits

These gluten free buttermilk biscuits turned out amazing! Recently I developed a recipe for a substitute for Gluten Free Bisquick. While everyone really enjoys the recipe and has been raving about it, I found it a little too starchy. So, I improved upon the blend while creating this new gluten free buttermilk biscuits recipe. I used cornstarch as a base instead of potato starch and later added some additional potato starch. I was able to enjoy these biscuits without adding butter, straight from the oven. I hope you enjoy them as much we did.

Gluten Free KFC Chicken Crispy Recipe

While KFC does not offer gluten-free Kentucky Fried Chicken, you can easily make your own at home. Make a lot of the seasoning blend, keep it on hand, and whip some up in no time. It is so delicious that it truly reminds me of my old KFC bucket days!

This delicious gluten free chicken pot pie recipe was adapted from All Recipes with a couple of twists of my own, creating a very flavorful sauce, with a touch of sweetness, which you may control. I've never enjoyed a pot pie before, even when they were made with gluten, but I went back for seconds on this gluten free pot pie! My newly developed gluten free pie crust is moist, light, and flaky, and the sauce in this recipe is so flavorful, making this is a match made in heaven! My husband had to stop eating premade pot pies years ago due to his low-sodium diet. So, he was in heaven with this version, as I was able to control the sodium content. He eats gluten, and truly enjoyed it! I hope you enjoy it as much as we did.

Image: Grilled Gluten Free Pizza

I keep hearing from some of my readers that it's just too hot to bake, even a good gluten-free pizza! In researching how to grill a gluten-free pizza in a cast iron skillet, I came across Man Tested Recipes' Pizza Dough for Cast Iron Skillet Pizza recipe. Though it is not a gluten-free grilled pizza recipe, it provided me with how much yeast to use, so I could skip the Expandex used in my previous gluten free pizza crust recipe. In addition, my last recipe was a bit too chewy for my taste. So, this time, I added a little more sorghum flour, used less tapioca starch and more potato starch, skipped the agar-agar, and tripled the yeast. It came out great in less than hour! I hope you enjoy!

Image: Gluten Free Chicken Parmesan

My husband's favorite meal is chicken or veal Parmesan. If you pound chicken breasts into thinner pieces it tastes just like veal parmesan. You can make small serving sizes or very large ones, whichever you wish. Serve it alongside some gluten free pasta with sauce, add a salad, and you'll have yourself a feast without a gluten hang-over!
