Crunchy Gluten Free Chocolate Mousse Pie

A decadent chocolate mousse fills a crunchy chocolate crust, topped with lightly sweetened whipped cream and additional chunks of crunchy cookies. Make the crust in advance so you can breeze through making the filling and topping the following day. My gluten-eating neighbors went crazy over this pie!

Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband's fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from "Gluten Free Cooking For Dummies®".  Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had 2 cans of cherry pie filling, but really needed 3 for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. Comstock is gluten free, and at one time Walmart's Great Value brand was gluten free. Just check.

Gluten Free 4th of July Red White & Blue Banana Cream Pie

If you like idea of the red, white and blue theme of 4th of July and Memorial Day, using fruit instead of artificial coloring is the way to go. While I prefer to use natural food coloring, blue is difficult to create. Make this gluten free red white & blue pie using my Gluten Free Banana Cream Pie Recipe. Slice of Gluten Free Buttermilk Lemon Pie

Everyone usually rates this gluten free buttermilk pie with four to four and half stars. When they make the lemon filling, they all rate it with five stars. Make this highly rated pie either way. It's simply delicious. Even your gluten-eating guests will rate the crust with five stars. Some have reported enjoying it more than gluten crust.

Today is National Blueberry Pie Day! What better way to celebrate it than with a gluten free blueberry pie? You will find the link below to my gluten free double pie crust, which is pretty easy to handle compared to most gluten free pie dough. This makes transferring the crusts a breeze, especially in a double pie crust. If you're pretty new to pie baking, consider  cutting out shapes and placing it on top, like in this Gluten Free Cherry Pie. I think I'd use smaller stars next time, though. Meanwhile, I hope you get to enjoy some of this delicious blueberry pie, as it is made with fresh blueberries. If you don't have the time for fresh, use Comstock or Wilderness brand pie fillings. Enjoy!
