Soft Gluten Free White Corn Tortillas

After visiting Mexico this summer, I was determined to find out how to make soft gluten free white corn tortillas. I usually buy Mission Super Soft White Corn Tortillas. They are much softer than their yellow corn tortillas, closer to flour tortillas, but with more fiber and obviously no gluten. However, if you prefer freshly made gluten free corn tortillas and arepas, without gum and preservatives, try this simple recipe. The special corn flour is easily accessible online and in specialty markets. You only need to add water and salt. You don't need a tortilla press to make them; however it works with one.

These gluten free wraps are soft and pliable, and that's not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don't allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. You finally have a thin, soft gluten free wraps that is pliable enough to roll and slice your favorite appetizers. Enjoy!

Soft Gluten Free Wholegrain Tortillas using Expandex

La Tortilla Factory makes a Gluten-Free, Ivory Teff Wrap. I have been wanting to go to Whole Foods to pick some up, but just haven't had the time with all of my other errands while I'm in town. So, my cravings got the best of me, and I created a recipe of my own. They turned out fantastic! And they don't taste anything like a whole grain gluten free wrap or tortilla. The best thing about them is that you can roll them like a regular tortilla. They made be even softer than the glutenous one. Just perfect, to me!

Note: This recipe calls for Expandex modified tapioca starch.

I already have a few gluten free tortilla recipes: Low-Sodium Gluten Free Tortillas (my first attempt - very similar to Trader Joe's brand - chewy and a little stiff), Gluten Free Naan Bread (so good, but is thick and calls for instant yeast), and Soft Whole Grain Gluten Free Wraps - Tortillas (when you use Expandex (modified tapioca starch these are the best!). However, I will continue to work on a soft flour tortilla using easily accessible and natural ingredients without the use of yeast. Today, I present you with another soft gluten free tortilla recipe.

Most corn tortillas are made with masa harina which are treated with lime. Since I am allergic to lime (both citrus and the type used to treat masa), I created this gluten free corn tortilla recipe using cornmeal instead of masa harina.
