Dear reader,

Sorry that I missed sending out a newsletter in July. I took a week off and just couldn't fit everything in. Plus, my recipe testers for my cookbook have been keeping me extremely busy. Most recipes are coming back with such high marks, 10/10 in every category mostly. It will be difficult deciding which recipes make it into my first cookbook.

I was also busy making some changes to my website. So far, the feedback has been extremely positive. It's cleaner and less distracting. If you cannot find something, just click on the icon with the three white, horizontal bars in the left column and scroll down.

I made this back in February when it was National Cream Cheese Brownie Day? I'm not making this up. Seriously! Such a day exists. However, I don't need an excuse to combine two of my favorite foods, cream cheese cheese and chocolate. Fresh Gluten Free Raspberry Muffins

Raw Spicy Carrot Salad`

Remember the old classic carrot and raisin salad? Well, this spicy carrot salad replaced that in our house a few years ago. The older we get, the spicier we enjoy our food. Gluteln Free Lemon & Coconut Shortbread Cookies

There's nothing like a good shortbread cookie with a cup of tea. We used to devour one of my former client's gluten free lemon shortbread cookies (Simply Shari's), but I can't have them anymore because they contain tapioca and citrus. My husband still enjoys them, though. Meanwhile, since my flour blend recipe calls for tapioca or cornstarch, I can make my own shortbread cookies. Gluten Free Oatmeal Chocolate Chip Cookies

I love chewy cookies. So, that's the way I decided to make these gluten free oatmeal chocolate chip cookies. Yum! I add chopped walnuts, but you can omit them, if desired. Gluten Free Microwaved Cheesecake

Whoever thought you could make a gluten free microwave cheesecake? You can! Though this is one of those recipes that vary per microwave and per your tastes. However, when you're craving something sweet and want to make dessert for one, this may work for you. We love in our house! It's a bit pastier than a traditional cheesecake, but with my homemade graham cracker crumbs and your favorite cheesecake topping, it's scrumptious. I had my recipe testers for my upcoming cookbook test this recipe. The majority of the testers enjoyed it. Some had to adjust the cooking times or temperature. Gluten Free Chili with Tomato Paste

I hadn't made chili with tomatoes for my husband in over a decade. Last weekend I was cleaning out our freezer and found a little tomato paste. So, I decided to use it in some chili for him. He enjoyed this recipe so much, I had to share it with it you. However, to be honest, he loves all of my gluten free chili recipes, which most are tomato-free. Gluten Free Tartiflette

Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That's why I use.
