Gluteln Free Lemon & Coconut Shortbread Cookies

There's nothing like a good shortbread cookie with a cup of tea. We used to devour one of my former client's gluten free lemon shortbread cookies (Simply Shari's), but I can't have them anymore because they contain tapioca and citrus. My husband still enjoys them, though. Meanwhile, since my flour blend recipe calls for tapioca or cornstarch, I can make my own shortbread cookies. My hubby misses lemon desserts since I realized I was allergic to it. So, I'm trying to make enough to freeze for him to enjoy!. I hope you enjoy them as well.

Gluten Free Oatmeal Chocolate Chip Cookies

I love chewy cookies. So, that's the way I decided to make these gluten free oatmeal chocolate chip cookies. Yum! I add chopped walnuts, but you can omit them, if desired. Gluten Free Trio Girl Scout Cookies

After tasting the new Trios Gluten Free Girl Scout Cookies, I knew those who were not able to find them in their area would have to taste these amazing cookies. I got right on it today. After several tweaks on baking times, height of dough, amount of invert sugar and butter, I finally did it. I knew on the last 2 batches that I baked, that I had achieved a copycat recipe of the Gluten Free Girl Scout Cookies, Trios! Again, I was thinking, "OMG!" I've only used that term twice on this blog, but they are truly amazing. When my gluten-eating husband gets home, he's going to flip out with joy as he loved the Trios and thet were all gone.

Flourless Gluten Free Coconut Peanut Butter Cookies

Earth Balance sent me a sample goody package quite awhile ago and I finally got around to developing a recipe using their Creamy Coconut Peanut Butter Spread (also available in crunchy). Chewy Gluten Free Molasses Cookies

Per a Facebook request for a gluten free molasses cookie recipe, I created these, as they sounded so good! I could have went the healthier route and used all molasses, but to create a crunchy outside, yet soft and chewy cookie inside, sugar of some sort must be used. I went for the gold, and used sugar in the batter for chewiness and the dough rolled in sugar for a crunchy outer crust. To die for!

Single Gluten Free Chocolate Chip Cookie

These gluten free chocolate chip cookies are great, and lower in cholesterol than the chewy varieties. I love chewy chocolate chip cookies. To obtain a chewy chocolate chip cookie you usually need to add additional butter, but I just refuse to add 3 cubes of butter in a cookie recipe. I discovered that substituting almond flour meal for additional butter makes it turn out softer and more flavorful. In addition, it gives you some extra protein. However, if you wish them chewy, by all means add more butter. I try to go as healthy as I can, even when cooking with refined sugar, though you can use evaporate cane juice and it turns out just as well. Enjoy!
