It not only fits in perfectly with the holiday, but it contains tons of chocolate. The filling contains white chocolate, cream cheese, and pumpkin puree. The crust of this gluten free pumpkin cheesecake is is made of chocolate cookies and is covered with a thin layer of pumpkin chocolate ganache. I took a shortcut by using Pamela's Products mini chocolate cookies for the crust. They really are ideal. This recipe has received rave reviews, even by gluten-eaters. It's not only trick or treat time for the kids, but us adults desire treats, as well. Imagine sweetened cream cheese, pumpkin, and graham crackers. What do you get? Pumpkin cheesecake! Then wrap them in chocolate and you get heaven in ball! Alternatively, instead of using ground gluten free graham crackers you can ground chocolate cookies. You can make these pumpkin cheesecake chocolates elegant by topping with candy pearls, drops of colored chocolate or another variety of chocolate, or dip the tops in a second color of chocolate. For the kids you can make them colorful by adding sprinkles, jimmies, etc. Or do a combination of both. Enjoy!

Vegan Pumpkin Ice Cream

Vegan Pumpkin Ice Cream

This is more of a sherbet than a vegan pumpkin ice cream, but is still extremely delicious for a diary free version. Since its development, I have discovered that adding one teaspoon of xanthan gum added to ice cream creates a more chewy texture. In this recipe you would need to mix about 1/2 teaspoon of gum with the oil. Note, that this is not a new recipe, but the original, published in 2010, seems to have vanished from this site. Enjoy!

Gluten Free Pumpkin Creme Brulee

Most creme brulee recipes are naturally gluten-free, but when you add canned pumpkin puree, you have to be careful that the manufacturer has not added any gluten containing ingredients. I used evaporated cane sugar to caramelize my gluten free pumpkin creme brulee as the sugar granules are larger. Coarse sugar is the best sugar to use in this case. However, granulated sugar works okay, too. Before you know it, Thanksgiving will be upon us and I thought you may like to use this recipe for one of your desserts. It's great because you can make it in advance and it is an recipe. Enjoy the fall season.

When I make cupcakes I prefer to use natural frosting rather than artificial food coloring, though when I do use coloring, I use Select Tea's natural food coloring. Gluten Free Pumpkin Bread

This is my first attempt at creating a gluten free pumpkin bread. I used my gluten-free flour blend that I have used successfully on 3 other cakes now, however, the top center never would cook thoroughly, but was just as yummy. I was really afraid the rest would dry out if I cooked it much longer, but you're welcome to give it a try. I couldn't wait until it cooled completely before I cut into it, which is no-no, but well worth it. This gluten free pumpkin bread is just as moist as my gluten free banana bread, and the best pumpkin bread recipe I've ever had gluten free, or not! Enjoy and let me know how yours turns out. I bet these would make perfect muffins.

These gluten free pumpkin pancakes are perfect for this time of year, whether served in October or for a Thanksgiving breakfast or brunch. I always make my banana pancakes with white rice flour and no gum at all, but with the bananas, you do not taste any grittiness and these definitely needed a bit of xanthan or guar gum. When I used regular white rice flour in this gluten free pumpkin pancakes recipe, I did notice some grittiness. I suggest trying sorghum flour or oat flour instead. And because it contains no starches, superfine rice flours should work well, too. Meanwhile, these were delicious anyway! Enjoy!

Douglas McNish makes a mean Raw Vegan Gluten Free Cheesecake. I started with his recipe and by the time I was finished, it developed into this lovely raw pumpkin cheesecake recipe. You will a high speed blender to make this. There is no getting around it. If you are not fortunate enough to own one, note that there are lower cost alternatives to the VitaMix brand. Meanwhile, raw pumpkin cheesecake is topped with raw caramel sauce, whipped nut cream, and cocoa nibs. I've included all of the recipes including how to make raw vanilla extract "liquid". Enjoy!
