I continue to hear from holiday bakers that the gluten free gingerbread house and cookie recipes that they have tried are far from delicious. So, I spent the weekend developing a delicious and sturdy gingerbread house recipe. I am ashamed to admit, my husband and I nearly consumed half of a house all by ourselves; and I don't usually enjoy gingerbread.

However, that's not all. I have additional gingerbread-flavored recipes for you today. Try the gingerbread cake, cookie or muffin recipe. The muffin recipe is healthy, too!

This gluten free gingerbread house recipe is both structurally sound and delicious. A matter of fact, I've never cared for gingerbread, even when I ate gluten. I couldn't stop eating this one! It truly is the best gingerbread house I have ever tasted. My hubby, who loves gingerbread cookies/houses, says it tastes just like the gluten versions. Use the template I provide and make it your own as I did, or use your favorite template.

Gluten Free Gingerbread Cake (Allergen-Free)

This wonderful gluten free gingerbread cake recipe is from Everyday Gluten Free, a self-published gluten free cookbook by Kim Wilson. This cake is moist, dairy-free, sugar-free, egg-free, nut-free, soy-free, (and corn-free, if you use a corn-free baking powder such as Hain's Featherweight). Gluten Free Gingerbread Cookies

In making gluten free gingerbread cookies, the trick is to have a very stiff dough and chill the dough to prevent spreading during baking. This dough is high in starch, making a soft (a bit chewy) cookie. If you like them crispy, I suggest using a higher rice flour to starch ratio and skip the baking powder. I chose to make a softer gluten free gingerbread cookie because my survey on Facebook resulted in more soft than crispy votes, and I cannot resist a soft or chewy cookie. I hope you enjoy this gluten free gingerbread cookies recipe. You do not need to be an artist to decorate them. I am certainly not. Yet they taste just as good. They are so fun to make. Have some fun today and get started. My great nieces and nephews loved them!
